So I’ve just been itching to get into the kitchen to do some more baking. So, I’m gonna do a lot of baking. Here’s what’s on the agenda: Cranberry Coffee Cake, Cinnamon Swirl Coffee Cake, Grapefruit Bars, and Brownies. So let’s get started!
Cranberry Coffee Cake (from Allrecipes.com)
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
2 cups flour
1/2 teaspoon salt
1 cup sour cream
1 (8 ounce) can cranberry sauce (whole or jellied)
Preheat oven to 350F and grease a 12 cup bundt pan. Cream the together the butter and the sugar until light. Add the eggs and stir well. Combine the flour, baking powder, baking soda and salt. Add the flour mixture alternately with the sour cream to the butter mixture, ending with the flour. Pour 1/2 of the batter into the prepared pan. Pour in the cranberry sauce. If using jellied cranberry sauce, you need to put it into a bowl and mix up with a fork to break it down to make it pourable. Pour in the rest of the batter. The batter is really thick, so you may need to spread it with the spatula. Try to avoid having the cranberry sauce touch the sides of the pan. It may best best to make a “moat” in the first half of the batter to pour the cranberry sauce into.Bake for 55 minutes. Cool for 10-20 minutes in pan on wire rack. Flip out onto a plate and continue to cool. Slice and serve.
Cinnamon Swirl Coffee Cake (from Allrecipes.com)
1 cup sugar
1 cup butter, softened
3 eggs
2 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 cup sour cream
3/4 cup white sugar
2 teaspoons ground cinnamon
Preheat oven to 350F . Grease a 12 cup bundt pan. In a large bowl, cream together 1 cup sugar with butter. Add the eggs and beat well. Mix in the flour, baking soda, baking powder, and sour cream, stir until just combined. Pour 1/2 of the batter into the prepared pan then sprinkle with 3/4 of the filling. Pour the remaining cake batter on top and sprinkle top with the remaining filling. Bake for 40 minutes. To Make Filling: Combine ground cinnamon and 3/4 cup sugar and mix well.
Grapefruit Bars
1 1/2 cups flour
2/3 cup confectioners/powdered sugar
3/4 cup butter, softened
3 eggs
1 1/2 cups sugar
3 tablespoons flour
1/4 cup lemon juice
Preheat the oven to 375F. Grease a 9×13 inch baking pan. Combine the flour, 2/3 cup confectioners’ sugar, and butter. Pat dough into prepared pan. Bake for 20 minutes in the preheated oven, until slightly golden. While the crust is baking, whisk together eggs, white sugar, flour, and lemon juice until frothy. Pour this lemon mixture over the hot crust. Return to the preheated oven for an additional 20 to 25 minutes, or until light golden brown. Cool on a wire rack. Dust the top with confectioners’ sugar. Cut into squares.
